Anchovy and Olive Pizza



1 lb pizza dough warmed to room temperature
2 Tbsp olive oil
1 – 1 ½ cups pizza sauce
1 Tbsp, or a big squeeze, umami paste
¼ cup pesto sauce
4 – 6 anchovy filets, chopped
½ cup pitted kalamata olives
4 cooked slices bacon, chopped
2 cup mozzarella cheese
Shaved Parmesan cheese, for service
Red pepper flakes, for service


1. Preheat oven to 425 degrees with a pizza stone in the oven.
2. Press out pizza dough to desired thickness. Rub the outside edge with olive oil.
3. Combine the sauce and umami paste. Spread over the pizza up to ½ inch of the edge. Dot the pizza all over with pesto. Spread anchovy filets, olives, bacon and mozzarella cheese. Bake for 10 minutes or until edges and bottom are browned. Remove and serve with parmesan and red pepper flakes.
