Mojo-Marinated Pork Sliders with Chutney



1 3-4 lb pork shoulder
1 – 2 jars Mojo marinade
1 onion, sliced
2 stalks celery, sliced
2 carrots, sliced
6 cloves garlic, mashed
Choice of chutney e.g. Kerala Tomato Chutney
Slider rolls

You'll Need:

Dutch oven


1. About 2 days before cooking, marinate the pork in the mojo sauce.
2. On the day of cooking preheat the oven to 325°. Remove the pork from the marinade. Sear pork in a heavy dutch oven until brown on all sides, then remove.
3. Sear onions, celery and carrots in dutch oven until limp. Add garlic and cook for another minute. Place pork and marinade in pot and return to a boil. Place in the oven and cook until fork tender, about 3-4 hours.
3. Remove from liquid, chill pork and marinade.
4. Remove fat and pull pork into shreds using two forks, and reheat with the juices.
5. Serve the pork on slider rolls with chutney.
