Cheese Panini with Country Ham and Black Olive Marmalade

Quick Facts:

Makes 4 sandwiches


8 thick slices sourdough bread
¼ cup olive marmalade
¼ cup roasted and salted pecans, chopped
4 ounces prosciutto or prosciutto style country ham
8 ounces Cypress Grove Lamb Chopper cheese, grated
Freshly ground pepper
¼ cup mayonnaise
2 ounces arugula, or to taste


1. Spread bread evenly on one side with marmalade.
2. Sprinkle with pecans and layer on prosciutto. Add cheese and grind pepper on top.
3. Spread mayonnaise evenly over both outsides of the bread.
4. Grill in pan, pressing down, or in a Panini press until cheese is melted and sandwich is hot. Add a little arugula, cut on a diagonal and serve.
