Hot Chocolate with Homemade Marshmallows

Quick Facts:

The secret to good hot chocolate is, of course, starting with quality chocolate. And adding homemade marshmallows makes a huge difference. They are easier to make than you would think!


Hot Chocolate:

3 cups milk
½ cup sugar
½ lb dark chocolate (or more, depending on how thick you like it)
2 Tbsp (or more) chicory pecan bitters


3 Tbsp gelatin (or 9 sheets)
½ cup cold water
2 cups sugar
¾ cup light (color) corn syrup
½ cup water
¼ tsp salt
2 Tbsp vanilla or flavoring
Powdered sugar


Hot Chocolate:
1. Combine all ingredients in a saucepan and gently heat whisking occasionally until sugar is dissolved and chocolate is melted.

1. Soften the gelatin in water in a mixing bowl.
2. Prepare the baking sheet by lining with plastic and parchment and lightly spray with oil.
3. In a 2 quart saucepan combine the 1st water, sugar, corn syrup and salt. Cook until it boils clear and boil to 244°.
4. Add hot mixture to the mixing bowl with the whisk attachment.
5. Whip for 15 minutes on as high of speed as you can without it splashing out of the bowl. It will begin to thicken and you will be able to increase the speed.
6. Spread onto prepared cookie sheet. Cool until set.
7. Cut and roll in powdered sugar.
