Cheese Crackers

1 cup all-purpose flour
4 oz – 1 ½ cups cheese (very sharp cheddar, gruyere, etc..)
¾ stick cold unsalted butter, cut into cubes
¼ tsp salt
½ tsp smoked paprika
¼ tsp cayenne
1 ½ Tbsp milk


1. Preheat oven to 350°.
2. Pulse flour, cheese, butter, salt, paprika and cayenne in a food processor until mixture resembles coarse meal. Add milk and pulse until dough forms a ball.
3. Place in plastic wrap and push it into a disk. May refrigerate at this point or continue with the recipe. Cut off about 1/3 of the disk and roll out to fairly thin on a floured surface. Cut into desired shapes and place on a sheet pan covered with parchment with a little space in between. Bake for 12 – 15 minutes until lightly browned. Cool completely and store in airtight container.
