Chipotle Lime Hummus

Quick Facts:

Makes about 3 cups


¼ cup tahini
2 – 15 oz cans chickpeas
1-2 medium cloves garlic, chopped
1 – 2 chipotle peppers in adobo, 2 will make it very spicy
¼ cup olive oil
¼ cup lime juice
2 tsp smoked paprika
2 green onions, minced (reserve some of the green for garnish)
¼ cup water to blend, or more if needed


1. Drain and rinse chickpeas.
2. Process all of the ingredients in a food processor until smooth. You may have to scrape down sides several times. Transfer the hummus to a bowl, cover, and chill until the flavors meld, at least 30 minutes.
