Grilled Okra Stuffed with Jalapeño Goat Cheese

• 12 pieces of okra
• ¼ pound jalapeño goat cheese
• 1 tablespoon spicy pepper relish (or mild if you prefer)
• olive oil
• salt and pepper, to taste
• 4 skewers


1. If using wooden skewers, soak the skewers in water for 2-3 hours before using.
2. Preheat the grill to medium heat.
3. Rub okra with olive oil and then season with salt and pepper.
4. Grill okra, rolling frequently until tender. Approximately 10 minutes. Set aside.
5. In a small bowl, combine goat cheese and relish.
6. Once the okra has cooled, using a sharp paring knife, slit the okra up the side.
7. Stuff with goat cheese and relish mixture.
8. Serve at room temperature.
