Pimento Cheese Biscuits with Pimento Cheese Spread

Pimento Cheese Spread
• 1 lb sharp Cheddar cheese, grated
• 4 oz pimentos, drained thoroughly and diced
• 2 Tbsp sweet relish
• ½- to ¾-cup mayonnaise
• salt and pepper, to taste

Pimento Cheese Biscuits
• 2 cups all-purpose flour (Southern Biscuit or similar)
• 2 tsp white sugar
• 4 tsp baking powder
• ½-tsp cream of tartar
• ½-cup shortening
• ⅔-cup Cheddar cheese, shredded
• ¼-cup green bell pepper, chopped
• 2 Tbsp pimento peppers, chopped
• ⅔-cup milk

You'll Need:

Oven pre-heated to 425°F


For Spread:
1. Combine all ingredients and mix well. Store in refrigerator, but bring to room temperature to serve.

For Biscuits:
1. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cream of tartar. Cut in the shortening with a pastry blender. Add the grated cheese, green bell pepper, and pimento; mix with a fork. Stir in milk and mix well.
2. Turn the dough out onto a floured surface and knead 5 times. Roll out and cut with small biscuit cutter.
3. Place onto a parchment lined baking sheet.
4. Bake for 15 minutes, or until browned.
