Roasted Radish Bruschetta with Compound Chive Butter

1 bunch of radishes
1/2 tsp olive oil
1 baguette, sliced into ¼ inch thick slices.
salt and pepper, to taste
4 oz butter
1 Tbsp minced chives
coarse sea salt, to taste


1. Preheat oven to 375 F.
2. Trim and Rinse 1 bunch of radishes. Toss with ¼ tsp olive oil, salt and pepper to taste.
3. Place on a baking pan and roast for 30 to 45 minutes or until the radishes are pierced easily.
4. Remove Baking Pan, and using a knife, slice radishes.
5. Brush baguette with olive oil. Sprinkle with salt and pepper. Bake until Crisp, approximately 5-10 minutes.
6. In a separate bowl, combine butter, salt and chives.
7. Brush butter mixture on sliced baguettes, and top with the sliced and roasted radishes.
