Seasoned Olives with Feta Cheese on Crostini

Quick Facts:

Serves 6


For Olives:
• 1 cup olives, pitted, drained and chopped
• ¼-cup feta cheese, crumbled and chopped
• 2 sun-dried tomatoes, drained and chopped
• 1 tsp fresh rosemary, minced
• ½-tsp fresh thyme, minced
• 1 clove garlic, boiled for 1 minute and minced
• ¼-tsp red pepper flakes
• 1 Tbsp lemon juice
• Thin zests of lemon (for garnish)
• Olive oil, if needed
• Salt and pepper, to taste

For Crostini:
• 6 slices, thick white country bread
• ¼-cup olive oil
• Salt and pepper, to taste

You'll Need:

Olive oil brush
Oven pre-heated to 400°


For Olives:
1. Combine all ingredients and marinate at room temperature for at least ½ hour. Refrigerate if keeping longer and let sit for a half hour before serving.
2. Garnish seasoned olives with thin strips of lemon zest.

For Crostini:
1. Brush olive oil onto bread slices, then season with salt and pepper. Bake at 400° for about 6 minutes until crisp.
