Smoky Boiled Peanut Hummus

Quick Facts:

Makes about 4 cups

Ingredients:

¼ cup tahini
2 cups peeled boiled peanuts
1 ½ cups canned chick peas, drained
1-2 medium cloves garlic, chopped
3 grilled sundried tomatoes in oil (or regular sundried tomatoes in oil)
¼ cup oil from sundried tomatoes
¼ cup lime juice
2 tsp smoked paprika
2 green onions, minced (reserve some of the green for garnish)
2 - 4 Tbsp water to blend
Bourbon smoked sea salt for garnish, optional

Directions:

1. Process all of the ingredients in a food processor until smooth, may have to scrape down sides several times. Transfer the hummus to a bowl, cover, and chill until the flavors meld, at least 30 minutes.
