Toasted Ravioli

Quick Facts:

24 frozen cheese ravioli
3 eggs, beaten
1 cup milk
2 cups seasoned flour
2 cups seasoned bread crumbs
2 cups peanut, rice bran or grapeseed oil
½ cup grated parmesan cheese, divided use
Julienned basil for garnish
2 cups good quality marinara sauce

Directions:

1. Combine eggs and milk whisking vigorously. Combine breadcrumbs and about ½ the Parmesan in a pie plate. Dip ravioli in milk mixture, flour, again in milk and then breadcrumbs.
2. Place on a parchment lined sheet pan. May keep in the freezer until ready to cook.
3. Heat oil in saucepan deep enough to fry ravioli. About 4 or 5 at a time fry ravioli in oil, turning once until nicely browned. It will only take a couple of minutes. Remove to a rack lined pan and keep warm in a low oven. Serve with warmed marinara, and a garnish of remaining Parmesan and basil.
