Watermelon Cocktail

Quick Facts:

Makes 4 drinks

Ingredients:

4 cups seedless watermelon
6 tablespoons Hibiscus simple syrup (can buy premade or use recipe below)
3 tablespoons Peychaud's bitters
Juice of 2 limes
½ cup rum
Fleur de sel with Espelette chilli pepper
Garnishes, cubes of watermelon, lime wedge, basil or mint, cherries, hibiscus flowers

Hibiscus Syrup
Makes 1 ½ cups
Ingredients:
1 cup sugar
1 cup water
6 hibiscus teabags or loose leaf hibiscus tea

Instructions:
1. In a small saucepan bring the sugar and water to a boil. When liquid is clear, turn off heat and add teabags. Cover and steep for 30 minutes. Remove tea bags and chill to room temperature. Refrigerate until ready to use.

Directions:

1. Put the watermelon in a blender, food processor or Vitamix. Process until liquefied.
2. Strain through a fine mesh strainer lined with a coffee filter or cheese cloth. Chill until ready to use.
3. Combine the watermelon, simple syrup, lime juice and rum. Rub a little lime over the top of the glasses. Dip lightly in a little fleur de sel with Espelette pepper. Pour over tall glasses of ice. Garnish and serve.
