Breakfast Burrito

1 lb Breakfast Sausage
2 large baking potatoes
2 Tbsp butter
1/2 cup diced onion
1/2 cup diced bell pepper
Salt and Pepper to taste
12 whole eggs
1 tsp hot sauce
Chopped chives, to taste
9" flour tortillas

Kids in the Kitchen: Summer Chef Series Pass


1. In a medium-sized saucepan cook the breakfast sausage until it is browned. On a seperate plate with paper towels, place the cooked breakfast sausage to drain off the fat.
2. Peel the potatoes and discard the skins. Cut the potatoes into 1-inch square chunks.
3. In a skillet over medium high heat, place the butter along with the potatoes and diced onion. Season with salt and pepper. Stir the mixture carefully, ensuring that the potatoes do not fall apart and until the onions are translucent. Turn off heat.
4. In a separate mixing bowl, whisk together a dozen eggs, hot sauce, chopped chives, salt, bell peppers and 1 cup of Monterey Jack cheese.
5. In a non-stick skillet, cook the egg mixture until it has reached your desired level of doneness.
6. In a large mixing bowl, combine the egg and potato mixture.
7. On a 9" flour tortilla, place 1 cup of the potato and egg mixture and roll it up. Repeat until all the mixture is used. Allow the burritos to cool.
8. Once cooled, wrap each burrito in wax paper, and twist the ends. Place the wrapped burrito in a zip-loc bag and place in freezer.
9. When ready to eat, remove from the freezer, leaving the burrito in the wax paper. Microwave for two to three minutes. Allow it to sit in paper for one minute before removing the wrapper to eat. Enjoy!
