Stuffed French Toast

Serves 8


4 eggs, lightly beaten
1 ¼ cup whole milk or half-and-half
2 tsp sugar
½ tsp salt
1 loaf Brioche Bread or Cinnamon Raisin Brioche
8 oz mascarpone cheese
½ tsp cinnamon
½ cup chopped tart dried red cherries
½ cup chopped sweet and salty pecans
2 Tbsp cherry jam or jelly
4 Tbsp butter, or more as needed
Confectioner’s sugar for serving


1. Whisk together the eggs, milk, sugar and salt.
2. Slice the far ends off of the brioche. Slice the brioche into 16 equal slices.
3. Combine the mascarpone, cinnamon, cherries, pecans and jam.
4. Divide the filling and spread onto 8 slices of the brioche up to ½ inch of the edge. Top with the other slice of brioche. Melt the butter in a large skillet.
5. Dip the sandwiches into the egg mixture, and allow excess to drip off and cook over medium heat until nicely browned on both sides. Hold in the warm oven. Sprinkle with confectioner sugar and serve.
