Quick Facts:

Approximately 12 biscuits


3 cups soft white flour
1 heaping Tbsp baking powder
½ tsp soda
1 tsp salt
1 tsp sugar
12 Tbsp cold shortening, cubed
1 ⅓ cups cold buttermilk
Softened butter

Recipe Description:

"These biscuits can be cut any size to suit the occasion. Just make sure they are an even thickness. I started teaching Southern Season's biscuit classes with Willard in 2004. It has become an institution for us and fostered a great cooking relationship for many years.”

1. Heat oven to 450°.
2. Sift dry ingredients.
3. With a pastry blender, cut in cold shortening until coarse with a few lumps.
4. Stir in buttermilk with a spatula until a loose ball forms, but do not over-mix!
5. Quickly turn onto a floured board and knead 4 turns.
6. Pat into a circle, ¾“ thick and cut with a well floured 2 ½” sharp cutter.
7. Place close but not touching on a parchment lined sheet pan. Bake for 15 minutes, turning half-way through baking.
8. Brush with soft butter and serve immediately.
