Rustic Peach and Fig Tarts

makes 2 tarts


• 2 cups flour
• 2 Tbsp sugar
• ⅛-tsp salt
• 2 sticks butter, cut into 16 equal pieces
• 2-4 Tbsp ice water
• 4 Tbsp butter
• 2 peaches, peeled, pitted and sliced very thin
• 5 figs, sliced thinly
• ¼-cup maple syrup
• ½-tsp thyme
• ¼-tsp lemon zest
• ¼-cup cream
• ¼-cup peach jelly
• whipped cream for garnish

1. Using a food processor, combine flour, sugar and salt. Pulse three times.
2. Add butter and pulse until mixture is coarse.
3. Add water, 1 tablespoon at a time until the mixture starts to form a ball.
4. Form this ball into 2 disks using a dough roller and wrap in plastic wrap. Chill in refrigerator for 15 minutes.
5. Heat oven to 425 degrees.
6. On a lightly floured surface, roll out each dough disk to about 14 inches round.
7. Combine peaches and figs with maple syrup, thyme and lemon zest in a bowl.
8. Place peach mixture evenly on dough disks, leaving about 2 ½ inches around the edge.
9. Fold the remaining dough over the edge of the filling and brush with cream. Sprinkled folded edge with sugar. This will create a small crust for the tart.
10. Bake for 30-40 minutes until dough is cooked through and the crust is golden-brown.
11. In a separate pan, heat jelly until it is warm and brush over tart.
12. Cool slightly and serve with whipped cream.
