Anise and Elderberry Glazed Pork Chops

4 Pork Chops
1/2 cup Norm's Farm Elderberry Jam
3 tablespoons fresh lime juice
1/4 cup water
1 1/2 teaspoon freshly grated ginger
1 tablespoon soy sauce
1 teaspoon sambal (chili garlic paste)
2 teaspoons fish sauce
1 garlic clove minced
1/4 teaspoon of ground star of anise (can substitute with Chinese five spice)

Norm's Farm in neighboring Pittsboro, NC makes delicious and flavor-packed jams and preserves from Elderberries, which is considered by many to be a superfruit with a delicious and tart flavor. Kim Calaway, our Cooking School manager, has kindly shared this delicious recipe and we hope you take the opportunity to try it.


1. Place all ingredients except for the pork chop in a small sauce pan. On medium heat, allow mixture to simmer for five minutes and remove from heat.
2. Sprinkle salt & pepper on both sides of the pork chops.
3. Grill pork chops over medium heat until grill marks are achieved. Turn pork chops over. Brush marked side with glaze while second side is cooking. Once the second side of the pork chop has the grill marks, flip and glaze.
4. Allow pork chops to cook until they reach an internal temperature of 155 degrees, approximately 3-4 minutes per side.
5. Remove from the grill and brush with the glaze again. Allow pork chops to rest for three minutes and then serve.
