Caribbean Chicken Skewers with Mashed Sweet Potatoes

Serves: 6-8


1 lb boneless skinless chicken breasts
½ cup Jerk marinade
½ cup ketchup
mashed sweet potatoes, recipe below

Mashed Sweet Potatoes Ingredients:
6 medium sweet potatoes, scrubbed, but unpeeled (about 4 lb)
6 Tbsp butter
2 Tbsp maple syrup
½ tsp salt


For the Caribbean Chicken Skewers:
1. In a small bowl. combine the jerk Marinade and ketchup.
2. On a cutting board, trim the fat from the chicken breasts and cut into small, thin bite sized chunks.
3. In a bowl, mix the chicken with the marinade, cover and soak overnight.
4. If using wooden skewers, soak them for several hours in water.
5. Heat the grill to maximum heat. If using a pan, turn stovetop to maximum heat.
6. While the grill is heating, thread the chicken onto the skewers.
7. Cook for at least 4 minutes per side, or until the chicken is cooked through. Minimum recommended temperature of 165 degrees.

For the Mashed Sweet Potatoes:
1. Preheat oven to 400 degrees and line a large baking sheet with aluminum foil.
2. Place the scrubbed, but not peeled sweet potatoes on the baking sheet and pierce each sweet potato several times with a fork.
3. In the oven, roast the sweet potatoes for an hour, or until tender.
4. Transfer the sweet potatoes to a large bowl and let cool.
5. Peel the sweet potatoes.
6. Mash the potatoes with the butter, maple syrup and salt.
7. Serve hot.
