• 3 Tbsp vegetable oil
• ½-tsp black mustard seeds
• ½-tsp cumin seeds
• ¼-tsp asafetida (hing)
• ¼-cup roasted peanuts, chopped
• 3 or 4 whole green Thai chilis
• 1 sprig curry, leaves removed from stem
• 3 small onions, finely chopped
• 1 garlic clove, minced
• 1 tsp fresh cilantro, minced
• 2-cups arborio rice
• 1 cup whole milk
• ¼-cup heavy cream
• 5-cups vegetable stock
• 1 tsp butter
• ½-cup Parmesan cheese, grated
• ½-cup paneer, grated
• salt & pepper, to taste

• roasted peanuts, chopped
• cilantro, chopped

Recipe Description:

Makes 8 servings


1. Heat the oil in a large, deep skillet over medium heat. Add mustard seeds and
cumin seeds; cook until they sizzle.
2. Add the asafetida and peanuts; fry until brown.
3. Add the chiles, curry leaves, onions and garlic. Cook until the onion is tender and garlic
is lightly-browned.
4. Add cilantro, salt and pepper; mix well. Add the rice and sauté for 2 minutes.
5. Add the milk and cream; heat to a simmer. Add the stock, 1-cup-at-a-time, and cook,
stirring constantly, until it is absorbed before adding more.
6. When the rice is cooked through, add the butter, Parmesan cheese and paneer.
7. Serve hot, garnished with additional peanuts and cilantro.
