Fig Jam and Arugula Pizza

Quick Facts:

This recipe is for a large, rectangular crust (approximately 12x20 inches). You also can make two smaller pizzas, depending on crust size.


1 prepared pizza crust or puff pastry, thawed
1 20-ounce jar Southern Season Fig Jam
2 medium onions, sliced and caramelized
Salt and pepper to taste
2 cups Gruyere, shredded
2 cups goat cheese, crumbled
12-15 thin slices of prosciutto
2 cups arugula


Spread jam on pizza crust. Cover jam with caramelized onions. Salt and pepper to taste. Scatter cheeses on top and bake about 20-25 minutes at 400 degrees or until golden and bubbly. Remove from oven and arrange arugula on top of cheese, then place prosciutto atop the arugula. Heat from cheese will wilt the arugula and warm the prosciutto. Slice and serve immediately.
