South of the Border Burger

1 lb not-so-lean ground beef
Salt and pepper, to taste
2 Tbsp neutral oil such as canola oil
4 slices sharp cheddar cheese
Spicy chipotle mustard
½ red onion, cut into very thin rings
Sweet gourmet pickles
Lettuce, to taste
1 tomato, sliced
1 avocado, sliced
Spicy or chipotle mayonnaise
4 hamburger buns, toasted


1. Form beef into 4 patties. Season generously with salt and pepper. Heat oil in skillet over medium high heat. Sear beef on both sides until nicely browned about 3 minutes per side. After first turn place cheese on top of burgers to melt slightly. Cook to desired doneness. Allow to rest for 5 minutes before assembling the burgers.
2. Assemble burgers. Smear bottom of the bread with chipotle mustard. Top with onion and burger. Top with pickles, lettuce, tomato, and avocado. Smear a little chipotle mayonnaise on top bun. Enjoy.
