Spaetzle with Country Ham and Herbs

Spaetzle Recipe

2 ¼ cups all-purpose flour
2 eggs
¾ cup milk
½ stick butter
2 shallots, minced
2 red bell peppers, chopped
½ pound diced thickly sliced country ham (Johnston county)
1 tablespoon Dijon mustard
1 tablespoon Worcestershire
½ cup chopped fresh herbs
1 cup vegetable or chicken stock, or more if needed

You'll Need:

Spaetzle maker or a colander


1. Combine flour, eggs and milk and let rest for about ½ hour.
2. In a large pot of boiling water, use a spaetzle maker or a colander and cook the spaetzle at once. Cook for about 5 minutes until it tastes tender. Drain in a colander and hold in cool water.
3. Melt the butter in a skillet. Add the shallots and peppers and cook until limp. Add the country ham and cook for a few minutes longer. Add the Dijon mustard Worcestershire and stock. Bring to a simmer. Drain the spaetzle and add to the skillet. Cook until heated through and serve immediately.
4. You can use pre-made spaetzle if you prefer and cook it according to package instructions.
