Tabbouleh Salad with Feta and Almonds

Serves 4-6

Ingredients:

1 cup cracked wheat
1 cup boiling water
1/4 cup olive oil
1/4 cup fresh lemon juice
2 large garlic cloves, minced
1 cup chopped plum tomatoes
1 tablespoon minced sundried tomatoes
1/2 cup chopped fresh Italian parsley
2 green onions, chopped
2 tablespoons chopped fresh mint
1 tablespoon chopped dill
1/2 cup crumbled feta cheese
1/4 cup toasted, slivered almonds
Salt and pepper, to taste

Directions:

Mix in 1 cup boiling water with cracked wheat. Let stand about 20 minutes until it has absorbed all the water and is tender. Add the tomatoes, parsley, green onions, mint, dill, feta and almonds.

Whisk oil, lemon juice, and garlic in small bowl to blend. Add oil mixture; toss to blend. Season with salt and pepper. Let stand at least 30 minutes to blend flavors.
