Brussels Sprout Slaw with Pimento Cheese Ranch Dressing

Quick Facts:

Makes about 3 cups

Ingredients:

1 pound Brussels sprouts, trimmed
2 medium carrots, peeled
½ small red onion, peeled, halved and thinly sliced
1 teaspoon kosher salt, or to taste
1 clove garlic, minced
1 teaspoon freshly ground pepper
1 teaspoon paprika
1 teaspoon parsley flakes
2 ounces pimentos, drained and minced
1 tablespoons diced pickled jalapeño
½ cup grated sharp cheddar cheese
½ cup mayonnaise
½ cup buttermilk

Directions:

1. Grate Brussels sprouts in a food processor or finely chop. Grate carrots as well.
2. Combine remaining ingredients. Combine enough of the dressing to coat the salad well. Don’t over dress, remaining dressing can be stored in the refrigerator for later use.
3. Serve.
