Cobb Salad

Cobb Salad Recipe

Quick Facts:

Serves 4

Ingredients:

1 pound smoked turkey breast, sliced thickly and cubed
1 head romaine lettuce, washed, dried, and torn into pieces
¼ cup vinaigrette (recipe follows)
¾ cups diced tomatoes
1 cup blue cheese, crumbled
1 small bunch watercress
1 avocados, cut into one-quarter-inch thick slices
¼ cup scallions, sliced on bias
4 eggs, hard-boiled, quartered
8 applewood smoked bacon slices, cooked very crisp and crumbled

Vinaigrette
5 Tbsp red wine vinegar
1 tsp Dijon mustard
1 tsp honey
1 tsp lemon juice
½ tsp salt, or to taste
¼ tsp ground black pepper, or to taste
1 garlic clove, boiled for 1 minute and minced
½ cups extra-virgin olive oil

Directions:

1. Combine all dressing ingredients except the oil. Add in the oil in a slow stream while whisking constantly.
2. Toss the romaine with the vinaigrette and divide between 4 plates. Divide toppings among plates, evenly.
3. Drizzle with remaining dressing.
