Savory Strawberry Salad

Quick Facts:

Serves 4


2 Tbsp champagne vinegar
2 tsp herb mustard
1 Tbsp strawberry honey
a pinch of salt and pepper
½ cup basil olive oil

1 quart hulled and sliced strawberries
½ English cucumber, scored, seeded and sliced
1 ripe avocado, seeded, sliced and removed from peel with a spoon
4 green onions, finely sliced
8 leaves of basil, julienned
4 cups arugula
Toasted, salted pecans, optional


1. Combine vinegar, herb mustard, honey, salt and pepper. Slowly drizzle in oil while whisking constantly until ingredients are emulsified.
2. Combine fruit and vegetables (except arugula) and gently fold in just enough dressing until nicely coated. Place arugula on each plate. Drizzle with a little dressing and top with strawberry mixture. Garnish with pecans if desired.
