Spring Greens with Dressing

Dressing ingredients:
1 cup spring lettuce or spinach leaves
½ cup fresh herbs (parsley, basil, chives and/or tarragon)
1 clove garlic, smashed or green garlic, chopped
1 shallot, minced
1 tablespoon Fallot Basil Mustard
2 tablespoons Honey
⅔ cup mayonnaise
⅓ cup buttermilk
1 tablespoon lemon juice
1 anchovy filet
¼ teaspoon salt
½ cup Extra Virgin Olive Oil
Salt and freshly ground black pepper, to taste

Salad ingredients:
Spring lettuce, all colors
Avocados, sliced
Radishes, sliced
Applewood Smoked Bacon (optional)


1. In a blender or food processor, combine 1 cup spring lettuce or spinach leaves, ½ cup fresh herbs, 1 clove garlic, 1 shallot, 1 T Fallot Basil Mustard, 2 T Honey, 2/3 c Mayonnaise, 1/3 c buttermilk, 1 T lemon juice, and 1 anchovy fillet.
2. Blend until smooth, and slowly add the olive oil to the mixture with the machine running.
3. Season the dressing to taste with salt and pepper. Set aside
4. Assemble the salad itself to taste.
5. Serve and top with dressing.
