Strawberry Chicken Salad with Poppy Seed Dressing

Ingredients:

Salad:
2 cups of strawberries – washed, trimmed and sliced
8 cups of mixed greens
2 cups of rotisserie chicken – shredded
1/3 cup pecans pieces
½ cup Crunchy Wonton Strips
¼ cup grated carrot
3 scallions sliced thinly

Dressing:
¾ cup of mayo
⅓ cup of sugar
1 T minced shallot
3 Tbsp of cider vinegar
2 tsp of poppy seeds
¼ tsp of salt
Pinch of pepper

Recipe Description:

This recipe is taken from our Kids in the Kitchen program designed to teach children the joy and values of cooking. Come bring your kid(s) Saturday, May 20 at 2 pm to learn how to make this recipe and other exciting recipes attending Strawberry Fields Forever

Directions:

1. In a bowl, add all the dressing ingredients together.
2. Whisk until it is smooth.
3. In a large bowl, combine 3/4 of the chicken, strawberries, nuts, wonton strips, scallions and carrots.
4. Mix together. If you want to chill the salad before serving, leave out the wonton strips until the salad is ready to serve.
5. Pour dressing on salad and toss gently.
6. Place salad on plates, top with remaining chicken and extra wonton strips for garnish.
