Turkey, Green Apple and Brie Panini with Chipotle Mayonnaise

Quick Facts:

Makes about 4 sandwiches


8 slices of sourdough bread
1 lb turkey, thinly sliced
Olive oil
¼ cup mayo
2 tsp adobo sauce from chipotles in adobo
4 oz brie cheese
1 green apple thinly sliced to the core on all sides (a mandolin works nicely for this)
4 lettuce leaves
12 slices of roasted tomatoes packed in oil or a thin film of sundried tomato pesto


Preheat oven Panini machine or heat skillet over medium heat. Combine mayonnaise and chipotle pepper sauce. Divide cheese among bread bottoms. Layer turkey on top. Add the apple slices. Brush both outsides of sandwiches with oil. Grill in Panini machine. Remove and add a generous portion of chipotle mayonnaise on top of bread and add lettuce leaves and tomatoes. Season with salt and pepper and serve.
