Grilled Okra Stuffed with Jalapeño Goat Cheese

• 12 pieces of okra
• ¼ pound jalapeño goat cheese
• 1 tablespoon spicy pepper relish (or mild if you prefer)
• olive oil
• salt and pepper, to taste
• 4 skewers


1. If using wooden skewers, soak for several hours in water.
2. Preheat grill to medium heat.
3. Rub okra with olive oil and season with salt and pepper.
4. Grill okra, rolling around frequently until tender, about 10 minutes.
5. In a bowl combine goat cheese and relish. When cool enough to handle, slit okra up the side with a sharp paring knife.
6. Stuff with goat cheese and serve at room temperature.
