Grilled Vegetable Salad

Serves 10

Ingredients:

1 grilled red onion
2 grilled corn
2 grilled bell peppers
1 grilled jalapeño
2 grilled tomatoes
2 grilled portobellos and any other assorted grilled vegetables
10 slices crusty country style French or Italian bread
2 tablespoons chopped chives and assorted herbs
6 ounces goat cheese
Thomas Balsamic vinaigrette, to taste

Directions:

Brush bread with olive oil. Sprinkle with salt and pepper. Grill turning once about 2 minutes per side, or toast in the oven.
Chop vegetables to desired size. Arrange vegetables on a plate. Sprinkle entire platter with chopped herbs.
Drizzle all with dressing.
Sprinkle with goat cheese.
Serve with bread.
