Sunday January 13 at 2 pm: Master the Element: Fat

While there are many varieties and sources of fat, they all have 3 distinct roles in the kitchen: used as the main ingredient, as a cooking medium, or for flavor.
Menu: Green Goddess Green Salad; Chicken Confit; Poached Root Veggies; Scalloped Potatoes; Almond Cardamom Tea Cake

Sunday January 20 at 2 pm: Master the Element: Acid

An integral part of making your mouth water, acids are essential in balancing out every part of an eating experience.
Menu: Roasted Radicchio Tart; Roasted Buttermilk Chicken with Herb Salsa; Lemon Asparagus; Pavlovas with Citrus Circles.
