Falling somewhere in between vinegar sauce and tomato sauce, mustard-based sauce is a phenomenon of South Carolina barbecue culture. Originating in the so-called Mustard Belt that runs from the Columbia area to the coast, it is a combination of tangy yellow mustard, tart vinegar and various other spices. Like brown sauce, many feel this sauce can overpower barbecue if not used carefully. Therefore, serving it on the side is often preferred.
