This Champagne method sparkling wine, made up of 70% Chardonnay, 20% Chenin Blanc, and 10% Pinot Noir, is from the Limoux region of Southern France. Faire la Fete, meaning to create a party, pays homage to Limoux, where the traditional method of crafting quality sparkling wine was invented in the mid-16th century. That’s before the process came to France’s Champagne appellation, making Limoux the “birthplace of bubbles.” The wine spends 12 months on its lees before being disgorged, creating an incredibly sophisticated sparkling wine that also has approachable and delicious aromatics and flavors — definitely a wine to celebrate with.
