Savory Citrus Salad

2 navel oranges, peeled and sliced
1 Valencia orange, peeled and sliced
1 blood orange, peeled and sliced
1 grapefruit, supreme
¼ heaping cup marcona almonds
1 shallot, minced
1 Tbsp Dijon mustard
1 Tbsp honey
¼ cup extra-virgin olive oil
Salt and pepper, to taste
Minced chives for garnish


1. While prepping fruit squeeze any remaining juice into a bowl. Add shallot, salt, pepper, mustard to the bowl. Whisk. Whisking constantly add oil. Arrange fruit and almonds on a plate. Drizzle with the dressing.
