Porcelain is fired at a much higher temperature than stoneware, making it harder, more durable, and less prone to breaking. Because of the types of clay used for porcelain, it can also be made much thinner than stoneware, making it lighter weight without compromising durability. Porcelain is also naturally thermal shock resistant meaning it can go straight from the refrigerator to the oven without worry, and can withstand much higher temperatures in the oven. Porcelain also won't get those pesky scratch marks from your silverware that we often see with stoneware.
