Summer Heirloom Tomato Pie

2 lb colorful heirloom tomatoes
2 cups crushed buttery crackers
1 stick butter, melted
1 cup Parmesan cheese
1 cup mayonnaise
1 cup grated sharp cheddar cheese
3 green onions, minced
Dash Zing Hot Sauce Original, to taste
Badia Coltobuono Olive Oil


1. Preheat oven to 375 degrees.
2. Slice the tomatoes about 1/8 inch thick and sprinkle with salt. Place in a colander or on a rack so excess liquid will drain.
3. Combine the butter, crackers and Parmesan and press into the bottom and up the sides of a 9 inch pie pan. Bake for 15 minutes
4. Combine the mayonnaise, cheddar, green onions and hot sauce.
5. Wipe the tomatoes dry and spread a layer (one third) on the crust. Spread one half of the mayonnaise onto the tomatoes. Spread another third of tomatoes onto that. Add the remaining mayonnaise mixture. Top with remaining tomatoes and drizzle with olive oil. Bake until bubbly about 30 minutes.
